First, Washoku and Japanese food are different. Overseas, Japanese people call “Washoku” a dish made from Japanese materials, so Washoku is also available for omelette and ramen, but there are many people who do not think so much in Japan. Then you will not know where the category falls, so it is easier to talk as “Japanese food” in this case.
Washoku is Japanese traditional food culture such as kaiseki dishes(simple meal served before a ceremonial tea) and local dishes. Its greatest characteristics are in “Umami(delicious taste)” and “Dashi(Japanese soup stock made from fish and kelp)”.
It is serious if a baby does not drink breast milk. Therefore, the ingredients “fat” and “Umami” and “carbohydrate” of breast milk are stimulating the pleasure center of the brain to appetite. Basically any cuisine is composed mainly of any of them, but only Washoku is composed mainly of “Umami” ingredients. In other words, if the dish is made up mainly of Umami, the shape can be called Japanese food anyhow.
The reason why the only food in the world around the world is “fat ” is why Japan is special, because it was impossible to import oil under the isolation policy for 300 years until the Meiji Restoration. Also, it is a big reason that there was no custom of taking an animal protein as a Buddhist country.
The basis of Japanese food is “umami”. As it is unique in Japan, so far there has not been much self-awareness of “umami” worldwide. However, sensational events occur in 2002. Although it was thought that there are only four of sweet, pungent, sour and bitterness, a sensor which the tongue feels umami, called “umami receptor”, was discovered.

Until then it was said that umami is only a concept. Both glutamate and inosinic acid were substances, but it was thought that there was no receptor on the tongue that felt its umami. However, it was found. The world is panicking. In other words, We found that people around the world can feel umami.
And a further characteristic of Washoku is to be healthy. And that is one of the reasons that attract attention in the world.
Worldwide it is in the direction of non-cream, non-butter, no more oil, more healthy, so attention is focused on healthy Washoku. Since it was registered as a UNESCO intangible cultural heritage in 2013, Japanese restaurants have increased by approximately 37,000 in the world. Overseas, Washoku is a big boom.

Introduction of popular Washoku

・Onigiri
Cooked rice and shaped it into round, triangular, bale and so on.
Various ingredients such as pickled plum, salmon flakes, tuna, etc. are available.
Often it is provided covered with laver.
Also, what is baked on the surface is called grilled rice ball.

・Misoshiru
Soup with miso melted and seasoned in dashi juice. Put in ingredients such as vegetables and tofu(=soybean curd) and make it.
Rice and miso soup are the best combination for Japanese.

・Nikujyaga
Cooked potatoes and beef or pork sweetly with soy sauce, sugar, sweet cooking sake etc. Sometimes it adds onion and yarn konnyaku.

・Dashimakitamago
Cook cooked to add soup to what stirs eggs, spread thinly in a pot and wind up. There are cases sometimes called Japanese-style omelets.
